Recipe: The Best Cauliflower Crust Pizza
If you're on Pinterest (<-- find us there!), chances are you've seen this recipe. It's been on a board of mine for ages, and I've always wanted to try it, but never had the guts. If you're trying to toss together a quick, no-mess weeknight dinner, this ain't it. Between the food processing, and the cauliflower "snow" (which ends up all over your kitchen), it's definitely a time investment. However, I found an excellent step-by-step from Tasty Kitchen, which I followed to the letter. Armed with her detailed instructions and pictures, I gave it a shot.
The results? It was delicious! Now I'll be honest... it could never, EVER beat a good old-fashioned pizza with real flour crust, but is there any food out there that can? It was light, in spite of all the cheese involved, and you really can't skimp on the cheese here; the crust needs it to get browned and crunchy. It's the perfect way to add more veggies to your family's meal. We chose pizza sauce, caramelized onions grilled chicken and mozzarella for toppings, and it hit the spot.
Tasty Kitchen's recipe calls for you to bake the crust for 8-11 minutes. I baked mine for 16 or 17 before adding toppings, and would probably increase that next time to improve crunch factor. Other than that, I followed her directions, and was pleasantly surprised.
