Summer Veggies: Shishito Peppers
Years ago, my husband and I ate and fell in love with blistered shishito peppers. I had never heard of them before, and now I see them frequently on menus. I'm always happy to see them and almost always order them. You know where you NEVER see them? The grocery store. So imagine my delight when I came across them at Whole Foods last week, unmarked (good thing I know what they look like!). To add to my excitement, since they were unmarked and not listed in the price book, the nice cashier gave them to me for FREE! Free food just tasted better, doesn't it?
Shishito peppers tend to be on the sweeter side, but once in awhile you can get a spicy one, so be careful if you're feeding these to the kiddos. I sauteed them until the skin blistered, added a little pink Himalayan sea salt and Soy Vey marinade, and voila! Served them warm with teriyaki salmon and it turned out to be the easiest weeknight dinner ever.
